Explore the world of Brazilian Pão de Queijo

1) Pão De Queijo and cheese board

Choose your favourite selection of cheeses. I personally love to serve cheese bread with a beautiful cheese selection of: La Luna ring (soft goats cheese), Blue Heysen (the orange blue) and Ossau Iraty (semi hard), some nice grapes and roasted tomatoes for some colour!

Simple roasted tomatoes:
1x small punnet of cherry tomatoes,
1x chopped garlic clove
1x tb of fresh basil
a drizzle of olive oil & salt and pepper to taste

Pre heat oven to 200C
combine tomatoes, garlic and olive oil and bake for 20 min or until you see the juice bubbling. Serve with fresh basil.
Tip: puncture the tomato skins with a fork before baking to prevent them from exploding in your oven.

2) Pumpkin, Ginger & Carrot Soup with Pão de Queijo

Soup Recipe:
1kg pumpkin (winter squash)
500g carrots
ginger & garlic 
a drizzle of olive oil & salt and pepper to taste

Pre heat the oven at 200C
Peel and chop 1 kg of pumpkin (winter squash) into small pieces and place them on a lined baking tray. 
Wash 500g of carrots, leave skin on, chop roughly and add to the same tray.
Chop 5-10g of ginger & 1 garlic clove add both to the veggie mix.
Drizzle all veggies with olive oil and season with salt and pepper to taste.
Roast for 30 min or until soft.
Put all ingredients in a food processor or using a stick blender and mix well.
Add a small amount of filtered water to get it to the consistency you like.
Wash baby spinach, roughly chop and add to the soup before serving.
Serve with some freshly baked cheese bread on the side.

3) Pão de Queijo Slider with smoked salmon, fresh goats curd & alfafa sprouts.

Wash the sprouts in filtered water and dry well.
Freshly bake your cheese bread, cut each roll in half and add your favourite slider fillings like smoked salmon, fresh goats curd and alfalfa sprouts.

4) Pão de Queijo with steak and vegetables

Heat your BBQ and pre heat your oven. Freshly bake the Pão de Queijo.
While your cheese bread is in the oven cook your favourite steak and steam some broccolini. Plate together and serve hot.
The cheese bread goes very well as accompaniment to a meal, covering the carbohydrate portion. Big and little kids love it!

 5) Pão de Queijo and a latte 

Keep it simple, the Pão de Queijo is a really nourishing snack, serve on its own with a cup of coffee in the morning.

6) Pão de Queijo morning & afternoon tea | snack for the kids

Serve the cheese bread accompanied by chopped fruit and orange juice, it's healthy and gives them everything they need to start and finish their day!

7) Pão de Queijo with salad

Put together some green salad, black olives, red capsicums, boiled eggs, cucumber and serve with some freshly baked Pão de Queijo... keep it simple and delicious.
