Caramelised Onion Tarte with Goats Cheese
The French version of pizza is called pissaladiere, and uses puff pastry instead of a dough base. Traditionally, it was topped with a heady mix of sardines, anchovies, and herbs but has evolved into a broader idea with more options. This fab version uses only FOUR ingredients, and takes almost no time to prepare.
1 tub caramelised onion jam
1 sheet good quality puff pastry
Goats cheese, chevre or feta, crumble into small pieces
2 tsp fresh thyme, leave stripped from stems
Preheat oven to around 150C. Line a baking tray with baking paper, and place sheet of puff pastry on top. Spread the caramelised onion jam over the pastry, then sprinkle the crumbled cheese & then the thyme evenly over the top. Place in the oven for approx 10 minutes, or until puff pastry rises and is golden on the edges. Remove from oven, and cut into squares of about 5cm.

Serves: 6-10 as a snack
