Butter Bean Mash
If you are trying to cut down on your starchy carbs, this alternative to mash potato or rice has the added benefit of being high in fibre and prebiotics so it's great for gut health. It's also fine to use cannellini beans but the butter beans have a slightly firmer texture that I think works better for this dish.
2 tins Chefs Choice organic butterbeans
100mL Chefs Choice extra virgin olive oil
2 cloves garlic, skin on, lightly crushed
1/2 tsp dried thyme
freshly grated zest of 1 lemon
1/2 tsp salt
salt & pepper for seasoning
Drain the butter beans, and place them into a food processor. Heat the olive oil in a small sauce pan with the garlic until the garlic becomes golden in colour. Remove the garlic, when cool enough peel it and add to the beans. Add all other ingredients to the food processor and blitz until the beans are fairly smooth.
You might like to add the juice of half the lemon if the mash is too heavy or thick. Season with extra salt & pepper to taste, and return to the pan to warm gently - or microwave - before serving.
