Black Bean & Tomato Salad

This delicious Mexican-style salad takes only minutes to rustle up and works so well with jerk chicken in a burrito.

Ingredients:
1 punnet red & yellow cherry tomatoes, quartered
1 tin black beans, drained
1 small red onion, finely chopped
1 corn cob, steamed and corn removed and separated into pieces
2 pickled jalapeno chillis, finely chopped
1/2 bunch fresh coriander, chopped
Zest and juice of one lime
Season with pepper, and tobasco or other hot sauce to taste
 
Method:
Combine all ingredients in a non-reactive bowl, allow to infuse for 15 minutes before serving.
